Meet Mateo Silva
I'm Mateo, and breakfast has always been my favorite meal of the day. Growing up in a large, loud family, weekend mornings were chaotic but filled with incredible food. However, as an adult, I found that weekday mornings were too rushed for proper cooking, and weekend brunches left me stuck at the stove instead of enjoying time with my family. I knew there had to be a better way to do breakfast.
My Culinary Philosophy
The Night Before: I am obsessed with overnight oats, prep-ahead casseroles, and freezer-friendly burritos. Let your fridge do the work while you sleep.
Bold Morning Flavors: I believe breakfast shouldn't be bland. I love incorporating fresh herbs, bold spices, and hearty proteins to kickstart the day.
Gathering Together: I design my larger weekend recipes to be served family-style right in the middle of the table.
My Background & Expertise
I cut my culinary teeth working the early morning shift at a busy neighborhood diner in my twenties. It taught me how to work fast, balance flavors, and cook eggs a hundred different ways.
