Ingredients:
- 1.5 cups (150g) graham cracker crumbs
- 0.25 cup (55g) granulated sugar
- 6 tbsp (85g) unsalted butter, melted
- 15 oz (425g) canned pumpkin puree
- 8 oz (225g) cream cheese, softened
- 14 oz (397g) sweetened condensed milk
- 1 cup (240ml) heavy whipping cream, chilled
- 1 tbsp (8g) pumpkin pie spice
- 1 tsp (2g) ground cinnamon
- 0.5 tsp (1g) salt
- 1 tsp (5ml) vanilla extract
Instructions:
- Combine graham cracker crumbs, sugar, and melted butter in a bowl until the mixture resembles wet sand.
- Press the mixture firmly into the bottom and up the sides of a 9-inch pie plate using the back of a measuring cup.
- Place the crust in the freezer for 10 minutes to set.
- In a large bowl, beat the softened cream cheese until smooth.
- Gradually stir in the pumpkin puree, sweetened condensed milk, pumpkin pie spice, cinnamon, salt, and vanilla. Mix on medium speed until velvety.
- In a separate chilled bowl, beat the heavy whipping cream on high speed until stiff peaks form.
- Gently fold one-third of the whipped cream into the pumpkin base to lighten the mixture.
- Carefully fold in the remaining whipped cream using a figure-eight motion until no white streaks remain.
- Pour the filling into the chilled graham cracker crust and smooth the top with a spatula.
- Cover the pie loosely with plastic wrap and refrigerate for at least 6 hours, or overnight, until firm.
