Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) light brown sugar, packed
  • 1/3 cup (65g) granulated sugar
  • 1/2 cup (120ml) pure pumpkin puree
  • 1 large egg, room temperature
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 2 tsp (5g) pumpkin pie spice
  • 1/2 tsp (3g) salt
  • 4 oz (115g) cream cheese, softened
  • 2 tbsp (30g) unsalted butter, softened
  • 1 cup (120g) powdered sugar
  • 1 tsp (5ml) vanilla extract
  • 2 tbsp (30ml) milk

Instructions:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until pale and fluffy.
  3. Stir in the pumpkin puree, egg, and vanilla extract, beating until smooth and velvety.
  4. In a separate bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually add the dry mixture to the wet ingredients, folding with a spatula just until no streaks of flour remain.
  6. Using a cookie scoop, drop rounded tablespoons of dough onto prepared sheets, spacing 2 inches apart.
  7. Bake for 10–12 minutes until edges are set and tops are a soft, matte copper color.
  8. Prepare frosting by beating together softened cream cheese, butter, powdered sugar, vanilla, and milk until smooth.
  9. Allow cookies to cool completely on a wire rack before frosting.
