Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) light brown sugar, packed
- 1/3 cup (65g) granulated sugar
- 1/2 cup (120ml) pure pumpkin puree
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 2 tsp (5g) pumpkin pie spice
- 1/2 tsp (3g) salt
- 4 oz (115g) cream cheese, softened
- 2 tbsp (30g) unsalted butter, softened
- 1 cup (120g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 2 tbsp (30ml) milk
Instructions:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until pale and fluffy.
- Stir in the pumpkin puree, egg, and vanilla extract, beating until smooth and velvety.
- In a separate bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt.
- Gradually add the dry mixture to the wet ingredients, folding with a spatula just until no streaks of flour remain.
- Using a cookie scoop, drop rounded tablespoons of dough onto prepared sheets, spacing 2 inches apart.
- Bake for 10–12 minutes until edges are set and tops are a soft, matte copper color.
- Prepare frosting by beating together softened cream cheese, butter, powdered sugar, vanilla, and milk until smooth.
- Allow cookies to cool completely on a wire rack before frosting.
