Ingredients:
- 1.5 cups (180g) gingersnap cookie crumbs
- 5 tbsp (70g) unsalted butter, melted
- 0.25 tsp (1g) ground cinnamon
- 1 can (15 oz / 425g) 100% pure pumpkin puree
- 0.5 cup (120ml) pure maple syrup
- 2 large (100g) eggs
- 1 cup (240ml) evaporated milk
- 1 tsp (2g) ground cinnamon
- 0.5 tsp (1g) ground ginger
- 0.25 tsp (0.5g) ground cloves
- 0.5 tsp (3g) salt
Instructions:
- Process gingersnaps in a food processor until they resemble fine sand.
- Mix crumbs with melted butter and cinnamon until the texture resembles wet sand.
- Pour mixture into the pie plate. Use the bottom of a flat measuring cup to press the crumbs firmly into the bottom and 1-inch up the sides.
- Bake at 350°F (175°C) for 8–10 minutes until the crust smells nutty and fragrant. Remove and let cool slightly.
- In a large bowl, whisk the pumpkin puree, maple syrup, and salt until smooth.
- Add eggs one at a time, whisking gently to avoid creating air bubbles.
- Gradually pour in the evaporated milk and spices. Whisk until the filling is a uniform, mahogany-orange color and no streaks of egg remain.
- Fill the pre-baked crust with the pumpkin mixture, smoothing the top with a spatula.
- Bake at 350°F (175°C) for approximately 45-50 minutes until the edges are set but the center still has a slight jiggle.
- Allow the pie to cool completely at room temperature, then refrigerate for 4 hours to ensure clean slices.
