Ingredients:
- 2 cups (250g) whole wheat pastry flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 2 tbsp (12g) pumpkin pie spice
- 1 cup (240ml) pure pumpkin puree
- ½ cup (120ml) maple syrup
- ⅓ cup (80ml) coconut oil
- 2 large (100g) eggs
- 1 tsp (5ml) vanilla extract
- 8 oz (225g) full-fat cream cheese
- ¼ cup (55g) Greek yogurt, strained
- ½ cup (60g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 1g salt
Instructions:
- Preheat your oven to 350°F (175°C). Line a 9x13 inch pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a large bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice until no clumps remain.
- Create a well in the center of the dry ingredients and pour in the pumpkin puree, maple syrup, melted coconut oil, eggs, and vanilla extract.
- Stir with a spatula until just combined; stop as soon as flour streaks disappear to ensure the cake remains tender.
- Pour the batter into the prepared pan, smoothing the top with a spatula.
- Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Prepare the frosting by whipping room-temperature cream cheese, strained Greek yogurt, powdered sugar, vanilla extract, and a pinch of salt until stable and smooth.
- Allow the cake to cool completely before spreading the cream cheese frosting evenly across the top.
