Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 2 tsp (8g) ground cinnamon
- 1 tsp (2g) ground ginger
- ½ tsp (1g) ground nutmeg
- ¾ cup (170g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 3 large eggs, room temperature
- 1 can (15 oz / 425g) 100% pure pumpkin puree
- 1 tsp (5ml) vanilla extract
- 8 oz (225g) full-fat brick cream cheese, softened
- ½ cup (115g) unsalted butter, softened
- 3 cups (360g) powdered sugar, sifted
- 1 tsp (5ml) vanilla extract
- ¼ tsp (1g) salt
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan and line it with parchment paper.
- In a medium bowl, whisk together flour, baking soda, salt, cinnamon, ginger, and nutmeg.
- Beat softened butter and granulated sugar on medium-high until pale and fluffy (about 2-3 minutes).
- Add eggs one at a time, beating well after each addition. Stir in the pumpkin puree and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed only until combined.
- Spread the batter evenly into the prepared pan and bake on the center rack for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely before frosting.
- Beat the brick cream cheese on medium speed until completely smooth.
- Add softened butter to the cream cheese and beat until pale and whipped.
- Gradually add powdered sugar and salt on low speed, then stir in vanilla extract until a stable, velvety frosting forms.
- Spread frosting evenly over the completely cooled cake using an offset spatula.
