Ingredients:
- 1.5 cups (180g) graham cracker crumbs
- 0.25 cup (50g) granulated sugar
- 6 tbsp (85g) unsalted butter, melted
- 16 oz (450g) full-fat cream cheese, softened
- 0.5 cup (100g) granulated sugar
- 1 tsp (5ml) vanilla extract
- 2 large eggs
- 1 cup (245g) pure pumpkin puree
- 0.5 cup (100g) packed brown sugar
- 1 tsp (2g) ground cinnamon
- 0.25 tsp (1g) ground ginger
- 0.25 tsp (1g) ground nutmeg
- 1 large egg
- 0.5 cup (65g) all-purpose flour
- 0.25 cup (50g) packed brown sugar
- 2 tbsp (28g) unsalted butter, cold and cubed
- 0.5 tsp (1g) cinnamon
Instructions:
- Preheat oven to 350°F (175°C) and line an 11x7 inch baking dish with parchment paper, leaving an overhang on the sides.
- Combine graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of the dish and bake for 8–10 minutes until golden.
- In a large bowl, beat softened cream cheese and granulated sugar on medium-low speed until smooth.
- Add vanilla extract and two eggs one at a time, mixing only until just combined to avoid incorporating excess air.
- In a separate bowl, combine pumpkin puree, brown sugar, cinnamon, ginger, nutmeg, and one egg. Mix until smooth.
- Pour the cream cheese mixture over the pre-baked crust. Spoon the pumpkin mixture on top and use a toothpick or skewer to create a swirl pattern.
- Prepare the streusel by mixing flour, brown sugar, cold cubed butter, and cinnamon until crumbly. Sprinkle evenly over the cheesecake layer.
- Bake for 40–50 minutes until the edges are set but the center still has a slight jiggle.
- Allow to cool completely at room temperature, then refrigerate for at least 4 hours before slicing into 16 bars.
