Ingredients:
- 1 ¾ cups (210g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 1 tbsp (8g) ground cinnamon
- ½ tsp (1g) ground nutmeg
- ¼ tsp (1g) ground cloves
- ½ cup (115g) unsalted butter, melted and cooled
- 1 cup (200g) light brown sugar, packed
- 2 large eggs
- 1 cup (245g) pure pumpkin puree
- ¼ cup (60ml) vegetable oil
- 1 tsp (5ml) vanilla extract
- 1 cup (120g) powdered sugar, sifted
- 3 tbsp (45ml) pure maple syrup
- 1 tbsp (15ml) whole milk
- ¼ tsp (1g) salt
Instructions:
- Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan with butter or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves until no clumps remain.
- In a large bowl, whisk the melted butter and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in the pumpkin puree, vegetable oil, and vanilla extract until the mixture is a uniform orange hue.
- Gently fold the dry ingredients into the wet ingredients using a spatula. Stop the moment no streaks of flour remain to keep the loaf tender.
- Pour the batter into the prepared pan, smoothing the top with a spatula.
- Bake for 50–60 minutes until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
- Let the bread cool slightly in the pan.
- In a small bowl, whisk together powdered sugar, maple syrup, milk, and salt until smooth.
- Pour the maple glaze over the loaf while the bread is still warm to allow partial absorption.
