Ingredients:
- 1.5 cups (180g) graham cracker crumbs
- 1/3 cup (75g) unsalted butter, melted
- 2 tbsp (25g) granulated sugar
- 1/4 tsp (1g) salt
- 8 oz (225g) cream cheese, softened to room temperature
- 1/2 cup (115g) powdered sugar
- 15 oz (425g) pumpkin puree
- 1 tsp (5ml) vanilla extract
- 1.5 tsp (6g) pumpkin pie spice
- 1 cup (240ml) heavy whipping cream, chilled
- 1 cup (240ml) heavy whipping cream, chilled
- 2 tbsp (25g) powdered sugar
- 1/4 tsp (1g) ground cinnamon
Instructions:
- In a medium bowl, stir together the graham cracker crumbs, melted butter, sugar, and salt until it resembles wet sand.
- Firmly press the mixture into the bottom and up the sides of the 9-inch pie plate, packing it tightly to avoid air pockets.
- Place the crust in the freezer for 10 minutes to firm up.
- Beat the softened cream cheese and powdered sugar on medium-high until completely smooth and no lumps remain.
- Stir in the pumpkin puree, vanilla extract, and pumpkin pie spice until the color is uniform.
- In a separate chilled bowl, whip 1 cup of heavy cream until stiff peaks form.
- Gently fold the whipped cream into the pumpkin mixture using a spatula to maintain a light texture.
- Pour the filling into the chilled crust, smoothing the top with a spatula.
- Cover with plastic wrap and refrigerate for at least 6 hours, preferably overnight.
- Just before serving, whip the remaining heavy cream, powdered sugar, and cinnamon together to create the topping.
