Ingredients:
- 15 oz pumpkin puree
- 2 cups granulated sugar
- 3/4 cup vegetable oil
- 4 large eggs
- 2 cups all-purpose flour
- 2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 8 oz full-fat cream cheese
- 1/2 cup unsalted butter
- 4 cups powdered sugar
- 1 tsp vanilla extract
Instructions:
- Preheat oven to 350°F (175°C) and grease a 13x9-inch baking pan.
- In a large bowl, beat the pumpkin puree, sugar, oil, and eggs together until the mixture is smooth and mahogany-colored.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- Gently fold the dry ingredients into the pumpkin base using a spatula. Stir only until no streaks of flour remain.
- Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Beat softened cream cheese and butter together until velvety. Gradually add powdered sugar and vanilla, mixing until fluffy.
- Spread the frosting evenly over the completely cooled bars.
