Ingredients:

  • 15 oz pumpkin puree
  • 2 cups granulated sugar
  • 3/4 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 8 oz full-fat cream cheese
  • 1/2 cup unsalted butter
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C) and grease a 13x9-inch baking pan.
  2. In a large bowl, beat the pumpkin puree, sugar, oil, and eggs together until the mixture is smooth and mahogany-colored.
  3. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  4. Gently fold the dry ingredients into the pumpkin base using a spatula. Stir only until no streaks of flour remain.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Beat softened cream cheese and butter together until velvety. Gradually add powdered sugar and vanilla, mixing until fluffy.
  7. Spread the frosting evenly over the completely cooled bars.
