Ingredients:
- 1 lb ground turkey
- 1 large egg, beaten
- 1/2 cup Italian-style breadcrumbs
- 1/4 cup grated Pecorino Romano or Parmesan cheese
- 2 cloves garlic, minced fine
- 2 tbsp fresh parsley, finely chopped
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp cracked black pepper
- 1 tbsp olive oil
Instructions:
- Combine the beaten egg, breadcrumbs, cheese, garlic, and herbs in a large bowl. Note: This ensures the salt and spices are evenly spread before the meat arrives.
- Add the ground turkey to the bowl.
- Gently fold the meat into the mixture using your hands or a fork. Stop as soon as the breadcrumb streaks disappear to avoid a rubbery texture.
- Lightly oil your palms with a bit of the olive oil.
- Form the mixture into 1.5 inch spheres. Note: Try to keep them uniform so they all cook at the same rate.
- Place the spheres on a parchment lined baking sheet.
- Leave one inch of space between each ball so the air can circulate and brown the sides.
- Bake at 400°F (200°C) for 13–15 minutes.
- Remove from the oven once the internal temperature hits 165°F (74°C) and they look golden brown.
