Ingredients:

  • 1 large English Cucumber (450g)
  • 3 medium Vine-Ripened Tomatoes (680g)
  • 1/2 small Red Onion (85g)
  • 1/2 cup Kalamata Olives (85g)
  • 1 medium Green Bell Pepper (140g)
  • 7 oz Feta Cheese (200g)
  • 1 tbsp fresh Oregano (3g)
  • 3 tbsp Extra Virgin Olive Oil
  • 2 tbsp fresh Lemon Juice
  • 1 tbsp Red Wine Vinegar
  • 1 clove Garlic (5g)
  • 1 tsp dried Oregano
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper

Instructions:

  1. Wash all vegetables thoroughly. Dice the cucumber and bell pepper into uniform 1-inch pieces. Cut the tomatoes into wedges and slice the red onion into thin slivers. Place all vegetables and olives into a large mixing bowl.
  2. Combine the olive oil, lemon juice, red wine vinegar, minced garlic, dried oregano, salt, and pepper in a glass jar. Shake vigorously for 30 seconds until the mixture is cloudy and well-combined.
  3. Drizzle the dressing over the vegetables and toss gently with a spoon. Place the feta cheese on top as a single block or crumble it over the top. Sprinkle with fresh oregano and an extra pinch of black pepper.
