Ingredients:

  • 1 lb (450g) lean ground turkey
  • 1 tbsp (15ml) olive oil
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper
  • 2 medium (400g) sweet potatoes, peeled and 1/4-inch cubed
  • 1 medium (110g) yellow onion, diced
  • 3 cloves (9g) garlic, minced
  • 2 cups (60g) fresh baby spinach
  • 1 tsp (2g) smoked paprika
  • 1 tsp (2g) ground cumin
  • 1/2 tsp (1g) onion powder
  • 1/4 tsp (1g) cayenne pepper
  • 1 tbsp (15ml) fresh lime juice
  • 2 tbsp (15g) chopped fresh cilantro

Instructions:

  1. Heat olive oil in a 12-inch skillet over medium-high heat until shimmering. Add ground turkey, breaking it into large chunks, and let sit undisturbed for 3–4 minutes to develop a brown crust before stirring. Cook until no pink remains.
  2. Lower heat to medium. Push the turkey to the sides of the pan and add diced onion, sautéing for 3 minutes until translucent.
  3. Stir in minced garlic and the seasoning blend (smoked paprika, ground cumin, onion powder, and cayenne pepper), stirring for 60 seconds until fragrant.
  4. Stir in the cubed sweet potatoes and add 2–3 tablespoons of water or broth. Immediately cover with a lid and steam for 8–10 minutes, stirring once halfway through, until potatoes are fork-tender.
  5. Remove the lid and stir in baby spinach, folding for 1–2 minutes until just wilted.
  6. Remove from heat and stir in fresh lime juice and chopped cilantro before serving.
