Ingredients:
- 2 cups (380g) cooked jasmine rice
- 2 tbsp (30ml) neutral oil
- 1 tbsp (15ml) soy sauce
- 1/2 tsp (3g) garlic powder
- 1/4 tsp (1.5g) salt
- 1 1/2 cups (225g) shelled edamame
- 1 cup (150g) shredded red cabbage
- 1 cup (150g) diced cucumber
- 1 medium (150g) avocado
- 2 stalks (30g) green onion
- 1/4 cup (10g) fresh cilantro
- 3 tbsp (45ml) tahini
- 2 tbsp (30ml) rice vinegar
- 1 tbsp (15ml) soy sauce
- 1 tbsp (15ml) maple syrup
- 1 tsp (5ml) toasted sesame oil
- 1 tsp (5g) freshly grated ginger
- 2 tbsp (30ml) warm water
Instructions:
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a bowl, toss the chilled rice with neutral oil, soy sauce, garlic powder, and salt until evenly coated.
- Spread the rice in a thin, single layer on the baking sheet and roast for 15–20 minutes, stirring once halfway through, until golden-brown and crispy.
- While the rice roasts, whisk together the tahini, rice vinegar, soy sauce, maple syrup, sesame oil, and ginger in a jar or bowl until smooth.
- Add warm water one tablespoon at a time to the dressing until it reaches a pourable consistency.
- In a large bowl, combine the shredded cabbage, cucumber, edamame, green onions, and cilantro.
- Drizzle half of the dressing over the vegetables and toss to coat.
- Gently fold in the cubed avocado and the cooled crispy rice, then drizzle with the remaining dressing and serve immediately.
