Ingredients:
- 2 cups (390g) cooked jasmine rice, chilled overnight
- 1 tbsp (15ml) avocado oil
- ½ tsp (3g) sea salt
- 1 large (300g) English cucumber
- 1 cup (150g) shelled edamame, steamed
- 2 scallions (10g), thinly sliced
- ¼ cup (15g) fresh cilantro, chopped
- ½ avocado (80g), cubed
- 1 tbsp (15ml) toasted sesame seeds
- 2 tbsp (30ml) rice vinegar
- 1 tbsp (15ml) low-sodium soy sauce
- 1 tbsp (15ml) toasted sesame oil
- 1 tsp (5ml) maple syrup
- 1 tsp (5g) fresh ginger, finely grated
- 1 tsp (5g) sriracha
Instructions:
- Preheat oven to 400°F (200°C). Spread the chilled rice on a parchment-lined tray, drizzle with avocado oil, sprinkle with salt, and toss to coat.
- Bake the rice for 40–50 minutes, stirring every 15 minutes, until mahogany-colored and hard to the touch.
- Gently smash the cucumber with a rolling pin until it cracks open, then slice into bite-sized, irregular chunks.
- Toss the cucumber chunks with a pinch of salt, let sit for 10 minutes to release excess water, then pat dry with a paper towel.
- Combine rice vinegar, soy sauce, sesame oil, maple syrup, ginger, and sriracha in a glass jar and shake vigorously for 30 seconds until emulsified.
- In a large bowl, combine the smashed cucumbers, edamame, scallions, and cilantro. Pour the dressing over the mixture and toss.
- Fold in the cubed avocado and top with the roasted crispy rice and toasted sesame seeds just before serving.
