Ingredients:

  • 2 cups refried beans
  • 1.5 cups shredded Monterey Jack or Pepper Jack cheese
  • 0.5 tsp garlic powder
  • 0.5 tsp ground cumin
  • 0.25 tsp salt
  • 6 medium flour tortillas
  • 3 tbsp neutral oil

Instructions:

  1. In a small bowl, combine the refried beans with garlic powder and cumin. Stir until smooth; if too thick, add a teaspoon of water or lime juice for a velvety consistency.
  2. Warm the flour tortillas in the microwave for 10 seconds to increase elasticity and prevent cracking.
  3. Spread approximately 3 tbsp of the bean mixture down the center of each tortilla, leaving a 1-inch border. Sprinkle a generous handful of shredded cheese over the beans.
  4. Fold in the sides of the tortilla and roll tightly, ensuring the seam is tucked neatly.
  5. Heat neutral oil in a 12-inch skillet over medium heat.
  6. Place 3 burritos in the pan, seam side down. Press lightly with a spatula and fry for 2–3 minutes per side until the exterior is mahogany-colored and the cheese is melted.
