Ingredients:
- ¾ cup (170g) unsalted butter
- ⅓ cup (80g) 100% pure pumpkin puree
- ¾ cup (150g) packed light brown sugar
- ½ cup (100g) granulated white sugar
- 1 large (50g) egg
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 2 tbsp (16g) cornstarch
- 1 tbsp (8g) pumpkin pie spice
- ½ tsp (3g) baking soda
- ½ tsp (3g) salt
- 4 oz (115g) full-fat cream cheese
- 2 tbsp (28g) unsalted butter
- 1 ½ cups (180g) powdered sugar
- ½ tsp (2.5ml) vanilla extract
Instructions:
- Place 170g butter in a stainless steel saucepan over medium heat. Stir constantly until the butter melts, foams, and then develops small brown specks and a nutty aroma.
- Immediately remove the browned butter from heat and whisk in the blotted pumpkin puree until the mixture is smooth.
- In a large mixing bowl, whisk the browned butter-pumpkin mixture with light brown sugar and granulated white sugar until the texture is velvety.
- Beat in the room-temperature egg and 5ml vanilla extract.
- In a separate bowl, sift together the all-purpose flour, cornstarch, pumpkin pie spice, baking soda, and salt.
- Gradually fold the dry ingredients into the wet mixture until a mahogany-colored dough forms.
- Scoop rounded tablespoons of dough onto baking sheets lined with parchment paper or silicone mats.
- Bake at 350°F (175°C) for 10–12 minutes. Remove when edges are set but centers still look slightly underdone.
- Prepare frosting by whisking softened cream cheese and 28g butter until smooth, then folding in powdered sugar and 2.5ml vanilla extract.
- Allow cookies to cool completely on a wire rack, then pipe a swirl of cream cheese frosting on top.
