Ingredients:
- 1 cup (225g) unsalted butter
- 1 tsp (5ml) pure vanilla extract
- 1 cup (245g) pumpkin puree
- ½ cup (110g) coconut sugar
- 2 large eggs (100g)
- ¼ cup (60g) plain Greek yogurt
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking powder
- ½ tsp (3g) baking soda
- ½ tsp (3g) fine sea salt
- 2 tsp (5g) pumpkin pie spice
- 1 tsp (2g) ground cinnamon
- ½ cup (65g) all-purpose flour
- ¼ cup (50g) coconut sugar
- 1 tsp (2g) ground cinnamon
- 3 tbsp (42g) chilled browned butter
- ½ cup (60g) powdered sugar
- 2 tbsp (30ml) pure maple syrup
- 1 tbsp (15ml) melted browned butter
- 2 tbsp (30ml) milk
Instructions:
- Place the butter in a skillet over medium heat. Melt and continue cooking, whisking constantly until the butter foams, crackles, and develops small brown specks and a nutty aroma. Immediately remove from heat and stir in the vanilla extract.
- In a large bowl, whisk together the pumpkin puree, sugar, eggs, Greek yogurt, and the browned butter until smooth.
- In a separate bowl, sift together the flour, baking powder, baking soda, salt, pumpkin spice, and cinnamon. Gently fold the dry ingredients into the wet mixture until just combined.
- In a small bowl, combine the flour, sugar, and cinnamon for the crumb. Cut in the reserved chilled browned butter using a fork or pastry cutter until distinct clumps form.
- Pour the batter into a greased 9x9 inch baking pan and evenly sprinkle the crumb topping over the surface.
- Bake for 50 minutes or until a toothpick inserted into the center comes out clean.
- Whisk together powdered sugar, maple syrup, melted browned butter, and milk. Drizzle the glaze over the cake once cooled.
