Ingredients:
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tbsp pumpkin pie spice
- 1/2 cup vegetable oil
- 1 cup granulated sugar
- 2 large eggs
- 1 cup pumpkin purée
- 1 tsp vanilla extract
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1 tsp ground cinnamon
- 4 tbsp cold unsalted butter, cubed
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice until fully combined.
- Beat the vegetable oil and granulated sugar until smooth.
- Add the eggs one at a time, then stir in the pumpkin purée and vanilla extract.
- Gently fold in the dry ingredients using a spatula. Stir only until no streaks of flour remain.
- In a small bowl, combine the streusel flour, brown sugar, and cinnamon.
- Using a fork or fingertips, work the cold butter into the streusel mixture until it forms pea-sized crumbs.
- Pour the batter into the prepared pan and sprinkle the streusel evenly over the top.
- Bake for 50–55 minutes until a toothpick inserted in the center comes out clean and the topping is mahogany brown.
- Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
