Feature Recipes of the Month
Chili-Chicken Stew
Ingredients:
6 skinned,boned chicken breast halves
1 Med. onion ,chopped
1 Med. green pepper Chopped
2 Garlic Cloves,Minced
1 Tablespoon vegetable oil
2 (14 1/2 -Ounce) can stewed tomatoes,
undrained & chopped
1 (15 Ounce) can pinto beans,drained
2/3 cup picante sauce
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
Shredded Cheddar Cheese,diced avocado, sliced green onions,& sour cream.
Cut chicken into 1 in. pieces, cook chicken,onion, green pepper, & garlic
in hot oil in a Dutch Oven until lightly browed. Add tomatoes & next 5
ingredients; cover reduce heat, & simmer 20 minutes.
Top individual servings with remaining ingredients.
